Delicious Chicken Parmesan


4 boneless, skinless chicken breasts
1 cup Italian breadcrumbs
1 cup flour
2 eggs, beaten
1 cup marinara sauce
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Salt and pepper
2 tbsp olive oil


Preheat oven to 375°F.
Place flour in a shallow dish and season with salt and pepper.
In another shallow dish, beat the eggs.
In a third shallow dish, combine Italian breadcrumbs and Parmesan cheese.
Dredge each chicken breast in the flour, then dip it in the egg mixture, and finally coat it with the breadcrumb mixture.

6 cups chicken or vegetable broth
1 lb mushrooms, sliced
1 onion, diced

Salt and pepper


In a large saucepan, bring broth to a simmer over medium heat.
In a separate large pot, heat olive oil over medium heat. Add mushrooms and sauté until they release their liquid and are golden brown, about 5-7 minutes. Remove mushrooms from pot and set aside.
In the same pot, add onion and garlic and sauté until onion is translucent, about 3-5 minutes.
Add Arborio rice to the pot and stir until it is coated in the oil mixture, about 1-2 minutes.
Add white wine to the pot and stir until it is absorbed by the rice.
Add 1 cup of the simmering broth to the pot and stir until it is absorbed by the rice. Continue adding broth 1 cup at a time, stirring constantly, until the rice is cooked through and the risotto is creamy and thick, about 20-25 minutes.
Stir in Parmesan cheese, butter, and the sautéed mushrooms. Season with salt and pepper to taste.
Serve hot and garnish with additional Parmesan cheese and chopped parsley, if desired.
