
Tofu Stir-Fry
Ingredients:
1 block of firm tofu
1 bell pepper, sliced
1 onion, sliced
1 cup of mushrooms, sliced
2 cloves of garlic, minced
1 tablespoon of soy sauce
1 tablespoon of cornstarch
1 tablespoon of sesame oil
Salt and pepper to taste
Steps:
Drain the tofu and cut it into cubes.
In a bowl, mix the cornstarch, soy sauce, and a pinch of salt and pepper. Add the tofu cubes and toss to coat.
Heat the sesame oil in a wok or large skillet over medium-high heat. Add the garlic and stir-fry for 30 seconds.
Add the onion and bell pepper, and stir-fry for 2-3 minutes, until slightly softened.

1 block of firm tofu
1/2 onion, chopped
1 bell pepper, chopped
1 garlic clove, minced
1 tablespoon of olive oil
1 teaspoon of turmeric
1/2 teaspoon of cumin
Salt and pepper to taste
Steps:
Drain the tofu and crumble it with a fork.
Heat the olive oil in a skillet over medium-high heat. Add the onion, bell pepper, and garlic, and sauté for 2-3 minutes, until softened.
Add the crumbled tofu, turmeric, cumin, salt, and pepper, and stir well to combine.
Cook for 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly crispy. Serve hot.
Tofu Curry
Ingredients:
1 block of firm tofu
1 onion, chopped
1 bell pepper, chopped
1 cup of broccoli florets
1 can of diced tomatoes
1 can of coconut milk
2 cloves of garlic, minced
1 tablespoon of curry powder
1 tablespoon of olive oil
Salt and pepper to taste
Steps:
Drain the tofu and cut it into cubes.
Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic, and sauté for 2-3 minutes, until softened.
Add the bell pepper and broccoli, and sauté for another 2-3 minutes.
Add the diced tomatoes, coconut milk, curry powder, salt, and pepper, and stir well to combine.
Bring the mixture to a simmer and let it cook for 10-15 minutes, until the vegetables are tender.
Add the tofu cubes and let them simmer in the curry for another 5-7 minutes, until heated through. Serve hot with rice or naan bread.
