Simple Dinner Recipes

Creamy Garlic Chicken


4 boneless, skinless chicken breasts
2 tablespoons olive oil
6 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon dried basil
1/2 teaspoon dried thyme
Salt and pepper, to taste


Season the chicken breasts with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, about 5-6 minutes per side.
Remove the chicken from the skillet and set aside.
Add the garlic to the skillet and cook for 1-2 minutes, or until fragrant.
Stir in the heavy cream, Parmesan cheese, basil, and thyme. Bring the sauce to a simmer.
Return the chicken to the skillet and spoon the sauce over the top.
Cover the skillet and cook for an additional 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
Serve hot and enjoy!

Vegetable Fried Rice


2 cups cooked rice
1 tablespoon vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 carrot, chopped
1/2 cup frozen peas
2 eggs, beaten
2 tablespoons soy sauce
Salt and pepper, to taste


Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 2-3 minutes.
Add the carrot and frozen peas to the skillet and cook for an additional 2-3 minutes.
Push the vegetables to one side of the skillet and add the beaten eggs. Scramble the eggs until cooked through.
Add the cooked rice to the skillet and stir to combine.
Stir in the soy sauce and season with salt and pepper, to taste.
Cook for an additional 1-2 minutes, or until everything is heated through.
Serve hot and enjoy!

Grilled Steak with Chimichurri Sauce


2 boneless beef steaks
2 tablespoons olive oil
Salt and pepper, to taste
1/4 cup fresh parsley leaves, chopped
1/4 cup fresh cilantro leaves, chopped
2 cloves garlic, minced
1/4 cup red wine vinegar
1/2 teaspoon crushed red pepper flakes
1/2 cup olive oil


Preheat the grill to medium-high heat.
Season the steaks with olive oil, salt, and pepper.
Grill the steaks for 3-4 minutes per side, or until cooked to your desired level of doneness.
While the steaks are cooking, make the chimichurri sauce. In a small bowl, combine the parsley, cilantro, garlic, red wine vinegar, and crushed red pepper flakes. Slowly whisk in the olive oil until the sauce is well combined.
Once the steaks are cooked, remove them from the grill and let them rest for 5 minutes.
Slice the steaks against the grain and serve with the chimichurri sauce.
