1 pound dry navy beans
1 pound ham hock or ham bone
1 onion, chopped
3 cloves garlic, minced
2 ribs celery, chopped
3 carrots, peeled and chopped
1 bay leaf
6 cups chicken or vegetable broth
1 teaspoon dried thyme
1 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons olive oil


Soak the navy beans in water overnight. Drain and rinse the beans before cooking.
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, garlic, celery, and carrots. Cook until the vegetables are softened, about 5 minutes.
Add the ham hock, bay leaf, chicken or vegetable broth, thyme, smoked paprika, and soaked navy beans to the pot. Bring the soup to a boil, then reduce the heat to low and let it simmer for 1-2 hours or until the beans are tender.
