1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs, yolks and whites separated
2 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup buttermilk
1 recipe Coconut-Pecan Frosting (see below)


Preheat oven to 350°F. Grease and flour three 9-inch round cake pans and set aside.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg yolks and vanilla.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to butter mixture alternately with buttermilk, beginning and ending with flour mixture, beating well after each addition.
In another large bowl, beat egg whites until stiff peaks form. Fold into batter until no white streaks remain. Pour batter evenly into prepared pans.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes before removing to wire racks to cool completely.
Spread Coconut-Pecan Frosting between layers and over top and sides of cake.

1 cup evaporated milk
1 cup granulated sugar
3 large egg yolks
1/2 cup unsalted butter
1 tsp vanilla extract
1 1/2 cups shredded sweetened coconut
1 cup chopped pecans


In a medium saucepan, combine evaporated milk, sugar, egg yolks, butter, and vanilla. Cook over medium heat, stirring constantly, until mixture thickens and becomes golden brown (about 10-12 minutes).
Remove from heat and stir in coconut and pecans. Cool until thick enough to spread (about 30 minutes), stirring occasionally.
Spread frosting between layers and over top and sides of cake.
