1 tsp smoked paprika
1 cup chicken broth
1 cup sour cream
Salt and pepper, to taste

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken thighs and brown on both sides, about 5-6 minutes per side. Remove from pot and set aside.
Add diced onions and minced garlic to the same pot and sauté until onions are translucent, about 5 minutes.
Add sweet and smoked paprika and stir to coat onions. Cook for an additional minute.
Return chicken thighs to the pot and add chicken broth. Bring to a simmer and cover with a lid. Cook for 30-35 minutes, or until chicken is cooked through and tender.
Remove chicken from the pot and set aside. Add sour cream to the sauce and stir until smooth.
Return chicken to the pot and heat through. Garnish with chopped parsley and serve hot.
