4 salmon fillets
1 mango, diced

4 large bell peppers
1 pound ground beef
1/2 cup cooked rice
1 can diced tomatoes
1 onion, chopped
2 cloves garlic, minced
1 cup shredded cheddar cheese
Salt and pepper to taste

Cut off tops of bell peppers and remove seeds and membranes.
In a skillet, cook ground beef, onions, and garlic until browned.
Add rice and diced tomatoes to the skillet and mix well.
Season with salt and pepper to taste.
Stuff each bell pepper with the beef and rice mixture.
Place stuffed bell peppers in a baking dish and bake for 30 minutes.
Sprinkle shredded cheese on top of each pepper and bake for an additional 10 minutes or until cheese is melted and bubbly.
