1. Quinoa Stuffed Bell Peppers


4 bell peppers, halved and seeded
1 cup quinoa, rinsed and drained
1 can black beans, drained and rinsed
1 can corn, drained
1/2 onion, chopped
2 cloves garlic, minced
1 tsp cumin

1/4 tsp salt
1/4 tsp pepper
1 cup shredded cheddar cheese (optional)

2 cloves garlic, minced
1/2 cup frozen peas and carrots
2 eggs, beaten
2 tbsp olive oil
3 tbsp gluten-free soy sauce
Salt and pepper to taste


In a large skillet, heat olive oil over medium-high heat.
Add onion and garlic and sauté for 2-3 minutes.
Add frozen peas and carrots and sauté for an additional 3-4 minutes.
Push vegetables to one side of the skillet and add beaten eggs to the other side. Scramble eggs until cooked through.
Add grated cauliflower to the skillet and sauté for 5-7 minutes until tender.
Stir in soy sauce, salt, and pepper until everything is well combined.
Serve hot.
