Grilled Salmon with Mango Salsa


4 salmon fillets
1 ripe mango, diced
1/4 red onion, diced
1 jalapeno pepper, seeded and diced
2 tablespoons chopped fresh cilantro
1 tablespoon honey
1 tablespoon lime juice
Salt and pepper, to taste


Preheat grill to medium-high heat.
Season salmon fillets with salt and pepper. Grill for 4-5 minutes per side, or until cooked through.
In a bowl, combine diced mango, red onion, jalapeno, cilantro, honey, and lime juice. Season with salt and pepper to taste.
Serve grilled salmon topped with mango salsa.

Baked Cod with Parmesan and Herb Crust


4 cod fillets
1/2 cup breadcrumbs
1/4 cup grated parmesan cheese
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh thyme
1 garlic clove, minced
1/4 cup melted butter
Salt and pepper, to taste


Preheat oven to 375°F.
In a bowl, combine breadcrumbs, parmesan cheese, parsley, thyme, garlic, melted butter, salt, and pepper.
Season cod fillets with salt and pepper. Place on a baking sheet lined with parchment paper.
Spoon breadcrumb mixture evenly over each fillet.
Bake for 15-20 minutes, or until fish is cooked through and topping is golden brown.

Spicy Tuna Poke Bowl


1 pound sushi-grade tuna, cubed
1/4 cup soy sauce
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon sriracha
1 avocado, diced
1/2 cucumber, sliced
1/4 red onion, thinly sliced
2 cups cooked rice
1 tablespoon toasted sesame seeds


In a bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, and sriracha.
Add cubed tuna to the bowl and toss to coat. Let marinate for at least 15 minutes.
Assemble poke bowls with cooked rice, marinated tuna, diced avocado, sliced cucumber, and sliced red onion.
Sprinkle with toasted sesame seeds before serving.

Crispy Pan-Fried Trout with Lemon Butter Sauce


4 trout fillets
1/2 cup all-purpose flour
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper

1 tablespoon lemon juice

Combine flour, garlic powder, paprika, salt, and pepper in a shallow bowl.
Dredge trout fillets in flour mixture, shaking off excess.
Heat olive oil in a large skillet over medium-high heat. Add trout fillets and cook for 3-4 minutes per side, or until crispy and golden brown.
Remove trout fillets from skillet and set aside.
Add butter to skillet and melt over medium heat. Add garlic and cook for 1-2 minutes, stirring constantly.
Stir in lemon juice and chopped parsley. Pour sauce over trout fillets and serve.
