Classic Spaghetti and Meatballs


8 oz spaghetti
8 oz ground beef
1 egg
1/4 cup breadcrumbs
1/4 cup grated parmesan cheese
1/4 cup chopped fresh parsley
1/2 onion, finely chopped
2 garlic cloves, minced
1 can (14 oz) crushed tomatoes
1 tablespoon olive oil
Salt and pepper to taste


Cook spaghetti according to package instructions, drain and set aside.
In a bowl, combine ground beef, egg, breadcrumbs, parmesan cheese, parsley, onion, garlic, salt and pepper. Mix well and form into small meatballs.

2 large portobello mushrooms
4 oz goat cheese
1/4 cup chopped sun-dried tomatoes
1/4 cup chopped fresh basil
2 garlic cloves, minced
2 tablespoons olive oil
Salt and pepper to taste


Preheat oven to 375°F. Remove stems from portobello mushrooms and gently scrape out gills with a spoon.
In a bowl, mix together goat cheese, sun-dried tomatoes, basil, garlic, salt and pepper.
Divide goat cheese mixture between the two mushrooms and spread evenly over the caps.
Place mushrooms on a baking sheet and drizzle with olive oil. Bake for 20-25 minutes or until mushrooms are tender and cheese is melted and lightly browned.
Transfer mushrooms to plates and serve immediately.

Lemon Garlic Shrimp Linguine


8 oz linguine
1/2 lb large shrimp, peeled and deveined
4 garlic cloves, minced
1 lemon, zested and juiced
2 tablespoons unsalted butter
2 tablespoons olive oil
1/4 cup chopped fresh parsley
Salt and pepper to taste


Cook linguine according to package instructions, drain and set aside.
In a skillet, heat olive oil over medium heat and add shrimp. Cook for 2-3 minutes per side or until shrimp are pink and cooked through. Remove from skillet and set aside.
In the same skillet, melt butter over medium heat. Add garlic and cook for 1-2 minutes or until fragrant.
Add cooked linguine, lemon zest and juice, parsley, salt and pepper to the skillet. Toss to combine and heat through.
Divide pasta between two plates and top with cooked shrimp. Garnish with additional parsley and lemon wedges if desired.
