Classic Corned Beef and Cabbage


4-5 pound corned beef brisket
1 head of green cabbage, chopped
6-8 carrots, peeled and chopped
6-8 red potatoes, chopped
1 onion, chopped
4 cloves of garlic, minced
1 tablespoon of whole peppercorns
3 bay leaves


Place the corned beef brisket, peppercorns, and bay leaves in a large pot and cover with water.
Bring the pot to a boil, then reduce heat to low and simmer for 2-3 hours.
Add the chopped vegetables to the pot and continue to simmer for an additional 30-45 minutes, or until the vegetables are tender.
Once everything is cooked, remove the corned beef and slice against the grain. Serve with the vegetables.

Reuben Sandwich with Corned Beef


1 pound sliced corned beef
8 slices of rye bread
1/2 cup sauerkraut
8 slices of Swiss cheese
1/2 cup thousand island dressing


Butter one side of each slice of bread and place butter-side down in a skillet over medium heat.
Add a slice of Swiss cheese to each slice of bread and let melt.
Once the cheese has melted, remove the bread from the skillet and set aside.
Add the corned beef to the skillet and cook until heated through.
Assemble the sandwich by layering the corned beef, sauerkraut, and thousand island dressing on top of the melted cheese. Top with the other slice of bread.
Cook the sandwich in the skillet until both sides are golden brown and the cheese is melted.

2 cups cooked corned beef, chopped
4-5 potatoes, peeled and chopped
1 onion, chopped
3 cloves of garlic, minced
1/4 cup vegetable oil
Salt and pepper to taste
4 eggs


In a skillet over medium heat, add the vegetable oil and potatoes. Cook until the potatoes are golden brown and crispy. Remove from the skillet and set aside.
In the same skillet, add the chopped onion and garlic. Cook until the onion is translucent.
Add the corned beef to the skillet and cook until heated through.
Once the corned beef is heated, add the cooked potatoes back to the skillet and mix everything together. Season with salt and pepper to taste.
In a separate skillet, fry the eggs to your liking.
Serve the corned beef hash topped with a fried egg.
