8 oz. rice noodles
2 tbsp. vegetable oil
2 cloves garlic, minced
1/2 lb. chicken breast, sliced
2 eggs, lightly beaten
1 cup bean sprouts
1/4 cup chopped peanuts
2 tbsp. fish sauce
2 tbsp. lime juice
2 tbsp. brown sugar
1/4 tsp. red pepper flakes


Prepare the rice noodles according to package instructions and set aside.
Heat the oil in a wok or large skillet over high heat.
Add the garlic and sauté for 30 seconds.
Add chicken and cook until no longer pink.
Add the eggs and scramble until cooked.
Add bean sprouts, peanuts, fish sauce, lime juice, brown sugar, and red pepper flakes. Stir-fry for 2-3 minutes.
Add the cooked noodles and toss everything together until well combined.

Coconut Curry Chicken


1 lb. chicken breast, cubed
1 tbsp. coconut oil
1 onion, chopped
2 cloves garlic, minced
1 tbsp. curry powder

1 can coconut milk
1 cup chicken broth

1 cup snow peas
1 tbsp. cornstarch
Salt and pepper to taste


Heat the oil in a large skillet over medium-high heat.

Add curry powder and ginger and cook for 1 minute.

1 lb. boneless, skinless chicken breasts
1 tbsp. vegetable oil
1 tbsp. soy sauce
1/2 tsp. ground ginger
1/2 tsp. garlic powder
1/4 tsp. red pepper flakes
4 cups mixed salad greens
1 cucumber, sliced
1/2 cup cherry tomatoes, halved
1/4 cup chopped peanuts
2 tbsp. lime juice
1 tbsp. fish sauce
1 tbsp. brown sugar
1 clove garlic, minced


Preheat oven to 375°F.
Rub the chicken breasts with vegetable oil and season with soy sauce, ginger, garlic powder, and red pepper flakes.
Bake in the preheated oven for 20-25 minutes or until cooked through.
Cut the chicken into bite-sized pieces and set aside.
In a large bowl, combine salad greens, cucumber, cherry tomatoes, and peanuts.
In a small bowl, whisk together lime juice, fish sauce, brown sugar, and garlic.
Pour the dressing over the salad and toss to combine.
Top with the cooked chicken pieces and serve.
