Chicken Spring Roll Recipe

1 pound boneless, skinless chicken thighs, thinly sliced

12 spring roll wrappers

In a bowl, marinate the chicken with soy sauce, sesame oil, salt, and black pepper for 15 minutes.
Add cornstarch to the chicken and mix well.
Heat vegetable oil in a pan over medium-high heat. Add the chicken and stir-fry until cooked through, about 5 minutes. Set aside.
In the same pan, stir-fry cabbage, carrots, and scallions for 2-3 minutes until slightly softened.
Soak a spring roll wrapper in warm water until pliable, about 10 seconds. Lay it on a flat surface.
Place a spoonful of the chicken mixture and vegetable mixture on the wrapper, leaving a 1-inch border on each side.
Fold the bottom of the wrapper over the filling, then fold the sides inwards, and roll tightly to seal.
Repeat with the remaining ingredients.
Heat a deep-fryer or a heavy-bottomed pot with enough oil to fully submerge the spring rolls.
When the oil is hot (350°F), fry the spring rolls in batches until golden brown, about 3-4 minutes.
Drain on a paper towel-lined plate.
Serve the spring rolls with hoisin sauce on the side for dipping.
