Classic Chicken Parmesan


4 boneless, skinless chicken breasts
1 cup Italian breadcrumbs
1 cup grated Parmesan cheese
1/2 cup all-purpose flour
2 eggs, beaten
1 cup marinara sauce
1 cup shredded mozzarella cheese
2 tablespoons olive oil


Preheat the oven to 375°F.

1 can diced tomatoes, drained
1 can black beans, drained and rinsed

In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
Add onion, garlic, and red bell pepper to the skillet and cook until vegetables are softened, about 3-5 minutes.
Stir in rice, cumin, paprika, cayenne pepper, and salt. Cook, stirring frequently, until rice is lightly toasted, about 2-3 minutes.
Add chicken broth and diced tomatoes. Bring to a boil, then reduce heat to low and cover. Simmer for 18 minutes.
Add black beans and reserved chicken to the skillet. Cook until chicken is heated through and beans are tender, about 5-7 minutes.
Stir in cilantro and serve.
